Who: Ultraviolet is Samantha Sheehan’s second label under which she makes Cabernet Sauvignon. She recently added this sparkling rosé to the lineup (and we’re thrilled she did!). Both wines are made in an artisanal manner, without any additives other than a judicious amount of sulfur.
What/How: An elegant blend of Cabernet Franc from Coombsville and French Colombard from Mendocino made using the Charmant method resulting in a playful, fruit-driven California sparkling.
Tasting Notes: Floral and mineral driven with notes of strawberry, orange blossom and grapefruit.
Pairs With: Shrimp cocktail, soft cheeses and charcuterie.
